What is black rice?
black rice is a whole grain non-basmati rice whose bran is packed with anthocyanins, the natural pigments that also colour blueberries. Because the colour sits in the bran, it is sold unpolished: black when raw, deep purple when cooked, with a nutty, mildly sweet taste. In India it grows mainly in the North-East, Odisha and Tamil Nadu, and Manipur’s Chak-Hao black rice received a GI tag in 2020.

What is black rice?
Black rice is a whole grain non-basmati rice whose bran carries a natural black-purple pigment called anthocyanin. It is also called forbidden rice or purple rice, and in India it is known as Chak-Hao in Manipur and Kavuni in Tamil Nadu.
Why is it called forbidden rice?
Old stories say it was once kept for royal families and was off-limits to ordinary people. Today it is grown and sold widely, but the name has stayed. Buyers looking for a forbidden rice exporter in India are asking for the same grain.
Is black rice a non-basmati rice?
Yes. It is a non-basmati rice with a medium to short grain of about 5 to 6 mm. It is sold as whole grain, with the bran left on, because the colour lives in the bran.
What gives black rice its colour?
Anthocyanins, the same group of plant pigments found in blueberries and purple cabbage. They sit in the bran layer, which is why the grain is not polished and why the cooking water turns purple.
How is black rice different from brown and white rice?
All three can come from long or short grains. White rice has the bran polished off. Brown rice keeps a light brown bran. The black grain also keeps its bran, but that bran is rich in anthocyanin, so it looks black and cooks purple with a nuttier, slightly sweet taste.
What is the protein content of black rice?

How do you cook black rice?
